Curry Chicken over Rice


I made this recipe last week and I've decided to add it to my permanent collection. It's just the right amount of creamy and crunchy--and it uses zucchini. Some of us have zucchini coming out of our ears right now.

I have a funny little story about zucchini. One day, many, many years ago, I decided that I wanted to start a garden. I had never had a garden before, but how hard could it be, really?

I started by planting zucchini. I planted 12 plants.

My sister-in-law, Marcia, raised her eyebrows at me and asked "Are you sure you want 12 plants?" She's such a little snot, I tell you. She could have told me how productive zucchini plants were, instead she just smiled knowingly, anticipating her own future entertainment when the little suckers started producing and I ran screaming from my garden experiment.

Peanut Head was in on the whole thing too. That's okay, I got him in the end. He took over the garden, developed a ginormous green thumb, and now I just sit back and watch everything grow. We only ever have one zucchini plant at a time now. There's no substitute for experience.
